Buckwheat is a product that can be served in many different ways, each of which reveals its taste from a new side. This cereal can surprise and delight even the most sophisticated gourmets. One of the great ways to serve buckwheat is to cook it with seasonal vegetables.

How to cook buckwheat with vegetables?

To prepare this dish you will need the following ingredients:

  • A glass of buckwheat and two glasses of water for cooking;
  • One onion, one carrot, one tomato, one beetroot and one bell pepper;
  • Two tablespoons of oil for frying;
  • A bunch of any greens;
  • Salt and spices to taste.

Cooking process

First, prepare the buckwheat: sort it out and rinse it thoroughly. Then put the grain in a saucepan, pour in water, add salt and cook until fully cooked.

While the buckwheat is cooking, prepare the vegetables. Chop the onion, bell pepper and tomato. Grate the carrot and beetroot. Heat the oil in a frying pan, fry the onion first, add the carrot after a couple of minutes, then the bell pepper. Then add the beetroot and tomatoes, mix well, add salt and spices. Cook the vegetables for about five more minutes.

When the vegetables are ready, add the cooked buckwheat, mix thoroughly and heat everything together for a couple more minutes. Finally, add chopped greens. The dish is ready to be served.
