Charlotte with plums: no more difficult to prepare than the traditional one with apples

Charlotte with plums is a delicious and simple dessert that you can make at home. This pie It turns out tender and airy thanks to the addition of sour cream to the dough.

To prepare a charlotte with plums you will need the following ingredients:
- strong dark plums – 600 g;
- rum or cognac – 2 tbsp;
- eggs – 3 pcs.;
- sugar – 150-200 g;
- flour – 250 g;
- baking powder – 2 tsp;
- sour cream (fat content not less than 30%) – 250 g;
- butter for preparing the pan;
- breadcrumbs to prepare the pan.
Cooking process
- Wash and dry the plums, cut each in half and remove the pits. Cut the plums into thin slices and place in a bowl.
- Sprinkle the plums with rum or cognac and stir gently. Cover the bowl with cling film and refrigerate until ready to use.
- Grease a 22cm diameter springform pan with butter and sprinkle with breadcrumbs. Refrigerate until ready to use.
- Beat the eggs with a mixer until light and fluffy. Gradually add all the sugar and continue beating.
- Sift flour and baking powder through a fine sieve into the egg mixture. Mix quickly with a mixer at low and high speed.
- Add chilled sour cream to the dough and gently stir with a spatula from bottom to top for 2 minutes.
- Place the prepared plums in a mold, spreading them evenly along the bottom. Pour the dough over the plums and place in an oven preheated to 200 °C.
- Bake the plum charlotte for 40–50 minutes. Check the readiness with a thin wooden skewer: if it is dry, the pie is ready.
Before serving, warm plum charlotte can be sprinkled with powdered sugar or a mixture of powdered sugar and ground cinnamon.
