Eggplants in tomato sauce are an excellent appetizer for the table. The dish has excellent taste qualities. We reveal its recipe.

Ingredients:
- Eggplant – 500 g
- Tomato – 500 g
- Onions – 0.5 pcs.
- Garlic – 2 cloves
- Sugar – 1 pinch
- Olive oil – 3 tbsp.
- Salt – to taste
Preparation:
- Peel the eggplants and cut them into medium-sized pieces. Add salt.
- Pour 2 tablespoons of olive oil into a frying pan. Fry the eggplants.
- Finely chop the onion and tomatoes.
- Pour 1 tablespoon of olive oil into the frying pan. Cook the onion over low heat for 10 minutes, stirring. After a while, add the tomato pieces. Cook for another 10 minutes.
- Let the sauce cool, then add sugar and garlic and grind the dressing using a blender.
- Pour the sauce over the eggplants. The dish is ready!
